This recipe is good for any part of the chicken that has skin on it. I used chicken thighs this time, but the same recipe can be used for wings and drumsticks!
(enough for 4 chicken thighs, 6-8 drumsticks or 12-14 chicken wings)
2 tbsp ketchup
2 tbsp soy sauce
the juice of 1/2 lime
1 wedge of garlic or some tube garlic (this is just as fine for marinades and keeps longer, so I usually use that)
Salt and pepper
If you’re Norwegian: Piffi. If not replace this with more paprica powder.
Preheat the oven to 220°C. Mix ketchup, soy sauce, lime juice and garlic together. Spice with paprica, salt and pepper to your liking.
Place the chicken in an oven proof pan.
Pour the marinade over it, but leave just a little bit behind in the bowl.
Now it’s time to get greasy! Use your hands to massage the marinade into the chicken on all sides. Take the remaining marinade from the bowl and use it to make a thicker layer of marinade on the top of each piece of chicken. Now sprinkle with a good amount of piffi or paprica powder.
Place in the preheated oven. After five minutes turn the heat down to 200°C. If you want to you can now use a spoon to apply the juice from the bottom of the pan onto the chicken. I’m usually too lazy and skip this step, but it’s supposed to give an even better taste.
After another 15 minutes check if the skin is nice and crispy. If it is, turn off the oven. I usually leave them for another 5 minutes with the oven off.
And voila! Awesome tasting chicken drumsticks/wings/thighs! Now serve them with some nice veggies. I like to serve it with mashed potatoes and rattatouille, but this time we just had some simple thyme potatoes and peas.
