Basic Sponge Cake
I often hear people talking about how difficult they imagine making marzipan cakes etc. is, but it is really really simple. If it’s the marzipan lid you’re scared of making yourself, you can buy quite decent ones. This basic sponge cake base is very quick and simple to make, and there are so many different things you can do with it. The only thing I uploaded so far using this base is this zerg cake, but I can guarantee that you’ll get to see a lot of more things done with this base.
Ingredients
6 eggs
180g sugar
180g flour
1 t.sp. baking powder
Procedure
1. Whip the eggs and sugar into a stiff eggnog
2. Sift together the flour and baking powder, then fold it carefully into the eggnog
3. Butter a round 24 cm tin, then cover it with a thin layer of confectioner’s sugar
4. Fill the tin with batter and bake in the oven at 160°C for 45 minutes.
5. Let it rest on a rist for 20 minutes before removing the tin around it
I usually only make half recipe (as in the picture), using a 20 cm tin as it makes for a really big cake. Then it only needs to be in the oven for 20-30 minutes.
Now after it is baked, the fun starts. You can do pretty much whatever you want. I usually divide the cake into three layers, fill one with fruit and one with vanilla cream, which I will upload a recipe on later. This one I filled with kiwi and vanilla cream, then covered with whipped cream.
